Irish Potato Candy

Celebrate St. Patrick’s Day with a cute candy that looks just like little potatoes.

Ingredients

• 1/4 cup butter, softened
• 1/2 of an 8-ounce package of cream cheese
• 1 teaspoon vanilla extract
• 4 cups confectioners sugar
• 2 1/2 cups flaked coconut
• 1 tablespoon ground cinnamon

Directions

1. In a medium bowl, beat the butter and cream cheese together until smooth.
2. Add the vanilla and confectioners sugar; beat until smooth.
3. Using your hands if necessary, mix in the coconut.
4. Form into potato shapes, and roll in the cinnamon.
5. Place onto a cookie sheet, and chill to set.
6. If desired, roll potatoes in cinnamon again for darker color.
